Proxmox does let you expand the disks live, but you need to:

1) enable hotplug disks in the vm->options
2) use a disk driver in the vm which supports hot resize (eg virtio)

If you’re using the emulated scsi/ide/sata disks it won’t let you resize live.

I usually just delete the recovery partition and don’t bother recreating it – you can get basically all recovery options by booting the installer anyway (it’ll also be recreated automatically the next time there’s a feature update).

As for non-contiguous partitions – convert the drive to dynamic, and you’ll be able to use those.

Yup, came here to comment this. I’ve had to do this on a number of servers at work.
