I usually install XP by copying the i386 directory to C: disk (so that in the rare case when Windows needs the install CD I don't have to go around looking for it), then run c:\i386\winnt32.exe /tempdrive:c: /syspart:c: (these two parameters are important, because otherwise the installer will try to put the Windows bootloader on the USB drive). You can install Windows 2000 and 2003 the same way.
